Green tomato relish

Amazing Green Tomato Relish

At the end of the summer you mayfind yourself with a good few green tomatoes. There's probably not enough sun and daylight for them to ripen up so the best thing to do is make some relish. The below measurements are based on how many tomatoes I had left. It made me 2 jam jars of relish.

I promise this makes absolutely fantastic relish! I'm yet to taste better. It's especially nice with cheese.

Ingredients

  • 3 cups of Green Tomatoes
  • 1 large Onion
  • 1 large Apple
  • 1 cup of Sugar
  • 1 cup of Cider vinegar
  • 1/2 tsp of Salt
  • Pinch of Ginger
  • Pinch of Nutmeg
  • Pinch of Cinnamon
  • Pinch of Tumeric
  • Pinch of Cumin
  • 4 Cloves crushed
  • 1 tsp of Mustard seeds

Method

  1. Dice the tomatoes, onion and apple.

  2. Add to a large pan along with all the other ingredients.

  3. Bring to the boil then simmer for 1hour 20mins.

  4. Get your jars ready. Sterilise them by putting in an oven at 150 degrees for 15 mins. Make sure your spoon and tongs are all sterilsed with boiling water too.

  5. Add to your jars, seal them and place in a pan of boiling water for 5 mins.

  6. Enjoy!
