Homemade Aioli

Make your own Aioli

Aioli is a french, garlic based sauce often confused by non-french with Mayonnaise. It's goes great with seafood, chicken, meat, pasta,  bread...actually it goes great with pretty much everything!

Ingredients

  • 3 free-range/organic egg yolks
  • 4 cloves garlic (chop really really small if you don’t have a food processor)
  • ½ lemon, juice only
  • salt and pepper
  • 150ml/5fl oz extra virgin olive oil
  • 1 teaspoon mustard powder or Dijon mustard (optional)

Method

  1. Blend all ingredients except mustard and olive oil, in a food processor.

  2. Pour the oil into the blender in a steady stream, until it forms a thick sauce. This can also be done manually with a whisk.

  3. The mixture when blended will be vibrant yellow in colour. To vary the flavour, add a little mustard or if you'd like your Aoili runnier, add a couple of tablespoons of hot water.
