Make your own Mayonnaise
Homemade mayonnaise - free from additives and full of flavour you just can't get from the supermarket.
Ingredients
- 2 large, fresh, organic eggs
- 1.5 cups of oil (use a light flavorless oil like sunflower, safflower or you can use a light olive oil)
- 1 tablespoon of lemon juice
- 1 tablespoon of white vinegar
- 1 tablespoon of Dijon mustard
- Season to taste with salt and pepper
All ingredients should be a room temperature before you use them

Separate yolks from the eggs

Place yolks, salt, pepper, Dijon mustard, and ½ lemon juice ½ white vinegar in blender cup or bowl of a food processor fitted with the metal chopping blade, or you can use hand held mixer, buzz for 15 seconds (use low speed). This can also be done manually with a whisk if you're being green.

Now, with motor running, slowly drizzle in 1/4 cup oil (use moderately high blender speed). As mixture begins to thicken, continue adding oil in a fine steady stream, add remaining lemon juice and vinegar. Stop motor and scrape mixture down from sides of blender cup or work bowl as needed.
